This roast chicken recipe is one of our family’s favourites! I make it nearly every other week and everyone, including fussy Luka and even fussier Daniella, enjoys it very much! It’s extremely quick and easy to prepare (which is always important). You get the chicken, potatoes and vegetables ready in the same go. But most importantly it is so delicious!!! After trying various roast chicken recipes, this one is now my favourite. I highly recommend you to making it. I don’t think you can ever go wrong with roast chicken and vegetables if you make it this way!
To make my best and easiest Roast Chicken ever you will need:
- Approx 2kg whole chicken
- 5-6 potatoes
- 4-5 carrots
- Few sticks of celery
- 1-2 onions
- 5 cloves of garlic
- Courgette (not necessary)
- Olive oil
- Salt and pepper
Preparation could not be easier!
The best bit of this whole recipe: no need to peel vegetables, only Onions. Just chop carrots, potatoes, celery and courgette (if using) in big chunks and throw all in a medium deep baking dish. Garlic does not need peeling too (I know, sounds too good to be true 🙂 ) just separate the cloves and place it in a baking tray together with other vegetables. Only peel onion (sight). Jut chop it in to big chunks and put with the rest – could not be easier!
Now sprinkle your vegetables with the salt and pepper and with some olive oil. Mix vegetables well using your hands. You can also throw few sticks of rosemary.
Preparing your chicken is not even a tiny bit more complicated. I prick the lemon with the knife and put it in a microwave for the few seconds, so it starts releasing the juice. Then cut my lemon in half and put it inside the chicken together with bunch of rosemary and couple of cloves of unpeeled garlic.
Wipe outside of your chicken with a paper towel to make sure it’s dry and rub it with the olive oil all over. Season it generously with the salt and some pepper.
Put the chicken on the top of your vegetables and it is now ready to roast!
Roast it for about 1.5 hours (depending on the size of the chicken) at about 190C (don’t overcook!). After it finishes cooking, take it off the oven and leave it to rest for about 10 minutes or so, so it will be nice and juicy.
Carve it and enjoy!
- We love it with gravy, that we make out of the gravy granules (you can get in any supermarket store) by just adding a little water.
- If you see vegetables around chicken over-browning, cover it with the foil, so they wont get dry.
- You can make a tasty roast chicken soup the day after, if there is are any chicken left!
