This roast chicken recipe is one of our family’s favourites! I make it nearly every other week and everyone, including fussy Luka and even fussier Daniella, enjoys it very much!  It’s extremely quick and easy to prepare (which is always important). You get the chicken, potatoes and vegetables ready in the same go. But most importantly it is so delicious!!! After trying various roast chicken recipes, this one is now my favourite. I highly recommend you to making it. I don’t think you can ever go wrong with roast chicken and vegetables if you make it this way!

To make my best and easiest Roast Chicken ever you will need:

  • Approx 2kg whole chicken
  • 5-6 potatoes
  • 4-5 carrots
  • Few sticks of celery
  • 1-2 onions
  • 5 cloves of garlic
  • Courgette (not necessary)
  • Lemon
  • Rosemary
  • Olive oil
  • Salt and pepper

Chicken in LEE KUM KEE Black Bean Garlic SauceTime is not my friend recently and I really don’t have the luxury to play in the kitchen for hours. I always get interrupted with Harry’s requests or Daniella’s and Luka’s needs. I only recently learned, that to keep my family fed and happy I don’t have to spend hours in the kitchen. There are so many things in the grocery store making cooking much easier! One of them is my new favourite LEE KUM KEE Black Bean Garlic Sauce.

We all love Chinese food. We often get take away (maybe a bit too often). And we all have our favourites: I love king prawns in black bean sauce (I am very much of a seafood person), Edward’s one is beef with ginger and spring onions or mixed seafood crispy fried noodles, Luka adores sweet and sour chicken. But we always like to taste each others dishes.

We are lucky enough to have Chinese supermarket not too far from our house. We like going there occasionally, as they have a big variety of seafoods, meats, noodles soup that we always buy- it’s really really tasty – much nicer than, for example, Maggi soup or any other cheap from Tesco or Asda supermarkets) and other lovely items that we love testing. So when we went there couple of weeks ago, LEE KUM KEE Black Bean Garlic Sauce somehow caught our attention. Super Easy Belly Pork Strips

Super Easy Belly Pork Strips recipeI have to be honest here. We are not very healthy eaters. Edward and I we both like heavy food and.. always big portions. Since I am 8 months pregnant now, I do try to change my diet at least a little bit – by eating healthier. Also to eat more fruits and salads..

One of my little sins or time to time cravings is belly pork. Love it. Roasted or strips – doesn’t matter. Couldn’t resist to my craving today and that’s how I prepared it for dinner. Cannot be simpler, quicker and tastier!

You will need:

8 or 10 (2 packs normally) belly pork strips
4-5 cloves of garlic (or more if you like)
About half cup of dark soya sauce
1-2 spoons of honey
1 lemon
Salt and pepper

Preparation is super easy! My 2 years daughter could easily do it ha ha.

Firstly cut belly pork strips in half (or 3 parts if you like it smaller). Put all in a bowl.

Mince your garlic with garlic press, finest side of a grater or finely chop it by using knife. Add all onto your belly pork.

Add soya, honey, salt and pepper. (Sorry for my picture with salt and pepper upside down). Cut lemon in half and squeeze both into your bowl with pork. Mix well.

Depending on how much time you have, leave your meat to marinate. I only had 1 hour and it did still turned out lovely, but more time you have, better it will be!!

Pre-heat your oven to 180 degrees, place your belly pork slices onto a baking tray, put it in the oven and cook for about 30 minutes flipping them on the other side half way through.

I served it with fresh salads – cucumber, tomatoes, spring onions, lettuce, rocket salads and dressing, plus mashed potatoes. Family loved it!

Homemade Burgers Sunday (Recipe)

Homemade Burgers Sunday (recipe)We had a proper relaxing Sunday today! Edward decided to make his famous homemade burgers, so we prepared a mini BBQ at home. I want to share this recipe, as these are honestly best burgers I have ever had!

You will need:

700g minced beef
1 egg
2 table spoons of worcester sauce
8 crushed crackers
Chopped parsley

Peper

Bread rolls
Cheese, cucumbers, tomatoes, lettuces, fried onions


Mayonnaise, ketchup, mustard or any other sauce you like

Homemade Burgers Sunday (recipe)Preparation is super easy – mix beef, egg, worcester sauce, crushed crackers and chopped parsley together. Add salt and pepper.

Roll into medium sized balls (not too small as it will be much more juicier) squash them flat.

Put on your BBQ and grill until cooked. Grill your bread rolls till crispy.

Serve all separately on the table, so everyone can pick vegetables or sauces they like. I can guarantee you, this will taste amazing!

White Fish in Soya Sauce Chinese Style

If you don’t know what to prepare for dinner or lunch and don’t want to spend too much time in the

kitchen, that will be a perfect option. I made this dish with cod fillet, but you can do with chicken, pork or even beef. My family love Chinese food and this is an easy option of how to make it at home.

So you will need:
  • 500g defrosted cod fillet (can be any other white fish fillet or chicken breast, beef or pork)
  • 3 eggs (2 might be enough if they are large)
  • Some corn starch (also could be potatoes starch or even flour)
  • Vegetables. I used cucumber, carrot, red peppers and courgettes, but they may vary depending on what you have in your fridge.
  • Garlic
  • 4 spoons of runny honey
  • Soya sauce
  • Salt and pepper
  • Olive oil
How to make:

Firstly cut the fish into little chunks and sprinkle both sides with salt and pepper.

Chop your vegetables (not too fine) and leave them ready for later.
Whisk you egg whites using mixer till it becomes firm and cover your fish in it.

Prepare some corn starch and heat up your pan to a maximum heat.

Put some olive oil, cover fish in starch and fry till its nice and crispy.
Take fish out of the pan, put some more olive oil and fry vegetables starting with carrots, as they take longest to get soft, and adding other vegetables step by step.

Take vegetables out and make a sauce
In the same pan put 4 spoons of honey and add half cup of soya sauce. 1/4 cup of water and heat all till nearly starts boiling. Next add finely minced garlic and stir everything well. Taste the sauce and adjust it to your taste. You can also add chilli powder if fancy it a little spicy.

 Add your fish and vegetables to the sauce, stir carefully and keep it on the medium heat till all soaks with flavour and smell (only for minute or two).

Serve it with plain rice or egg fried rice! My family loved it.
