Best and Easiest Roast Chicken Recipe Ever

This roast chicken recipe is one of our family’s favourites! I make it nearly every other week and everyone, including fussy Luka and even fussier Daniella, enjoys it very much!  It’s extremely quick and easy to prepare (which is always important). You get the chicken, potatoes and vegetables ready in the same go. But most importantly it is so delicious!!! After trying various roast chicken recipes, this one is now my favourite. I highly recommend you to making it. I don’t think you can ever go wrong with roast chicken and vegetables if you make it this way!

To make my best and easiest Roast Chicken ever you will need:

  • Approx 2kg whole chicken
  • 5-6 potatoes
  • 4-5 carrots
  • Few sticks of celery
  • 1-2 onions
  • 5 cloves of garlic
  • Courgette (not necessary)
  • Lemon
  • Rosemary
  • Olive oil
  • Salt and pepper

Chicken in LEE KUM KEE Black Bean Garlic SauceTime is not my friend recently and I really don’t have the luxury to play in the kitchen for hours. I always get interrupted with Harry’s requests or Daniella’s and Luka’s needs. I only recently learned, that to keep my family fed and happy I don’t have to spend hours in the kitchen. There are so many things in the grocery store making cooking much easier! One of them is my new favourite LEE KUM KEE Black Bean Garlic Sauce.

We all love Chinese food. We often get take away (maybe a bit too often). And we all have our favourites: I love king prawns in black bean sauce (I am very much of a seafood person), Edward’s one is beef with ginger and spring onions or mixed seafood crispy fried noodles, Luka adores sweet and sour chicken. But we always like to taste each others dishes.

We are lucky enough to have Chinese supermarket not too far from our house. We like going there occasionally, as they have a big variety of seafoods, meats, noodles soup that we always buy- it’s really really tasty – much nicer than, for example, Maggi soup or any other cheap from Tesco or Asda supermarkets) and other lovely items that we love testing. So when we went there couple of weeks ago, LEE KUM KEE Black Bean Garlic Sauce somehow caught our attention. Spanish Roast Chicken

Spanish Roast ChickenIt would be sin not to share this recipe. It is so so soooo tasty and really easy to make! I found Spanish Roast Chicken’s recipe on the internet – originally it is written by Jamie Oliver. I fell in love with his way of cooking. All dishes are so tasty and very easy and quick to make! So here it is:

2 kg Whole Chicken 
Potatoes (about 1.5kg)
4x Lemons
1 Handful Fresh Parsley
Spanish Roast Chicken300g Iberico Chorizo Sausage
2 Cloves Garlic
Sea Salt
Freshly Ground Black Pepper
Olive Oil

Preheat the oven to 220C

    Spanish Roast Chicken

  • Cut potatoes into 2.5cm dice
  • Boil potatoes together with two lemons for 5 minutes
  • Drain, then prick the lemons all over with a knife
  • Remove parsley leaves from stalks and put them to one side
  • Stuff the chicken with pricked lemons and parsley stalks. I also put couple of pieces of chorizo sausage inside.
  • Season the chicken with salt and freshly ground pepper.
  • Slice chorizo to 0.5cm pieces  
  • Lay a greaseproof paper into baking tray
  • Place potatoes into the centre and place the chicken on top              
  • Sprinkle with chorizo and chopped parsley and drizzle with olive oil
  • Place in the oven for around 1 hour 20 minutes              

While the chicken and potatoes are cooking you can make what the Italians call gremolata, by finely chopping the zest of your 2 remaining lemons and mixing it with the chopped parsley and garlic. Season with a little pinch of salt and freshly ground black pepper and toss together to create a really fragrant seasoning-type garnish. (Text taken from

  • Remove baking tray from the oven, take the chicken out and leave it to rest. 
  • Shake the potatoes in the baking tray and put them back in the oven for few more minutes to crisp up.                       

Carve the chicken and divide between 8 plates, with the potatoes. The potatoes will have taken on the smoky paprika flavour from the chorizo, so if there is any juice left over in the tray, pour every last drop over the plates. When you sprinkle over the gremolata it will hit the hot juice and smell fantastic. You’re going to love this one! A rocket salad goes really well with it. (Text taken from
