Super Easy Belly Pork Strips recipeI have to be honest here. We are not very healthy eaters. Edward and I we both like heavy food and.. always big portions. Since I am 8 months pregnant now, I do try to change my diet at least a little bit – by eating healthier. Also to eat more fruits and salads..

One of my little sins or time to time cravings is belly pork. Love it. Roasted or strips – doesn’t matter. Couldn’t resist to my craving today and that’s how I prepared it for dinner. Cannot be simpler, quicker and tastier!

You will need:

8 or 10 (2 packs normally) belly pork strips
4-5 cloves of garlic (or more if you like)
About half cup of dark soya sauce
1-2 spoons of honey
1 lemon
Salt and pepper

Preparation is super easy! My 2 years daughter could easily do it ha ha.

Firstly cut belly pork strips in half (or 3 parts if you like it smaller). Put all in a bowl.

Mince your garlic with garlic press, finest side of a grater or finely chop it by using knife. Add all onto your belly pork.

Add soya, honey, salt and pepper. (Sorry for my picture with salt and pepper upside down). Cut lemon in half and squeeze both into your bowl with pork. Mix well.

Depending on how much time you have, leave your meat to marinate. I only had 1 hour and it did still turned out lovely, but more time you have, better it will be!!

Pre-heat your oven to 180 degrees, place your belly pork slices onto a baking tray, put it in the oven and cook for about 30 minutes flipping them on the other side half way through.

I served it with fresh salads – cucumber, tomatoes, spring onions, lettuce, rocket salads and dressing, plus mashed potatoes. Family loved it!

Roast Pork

Roast PorkThis is probably one the best our family recipes! We love it, our friends loved it, everyone loved it! (At least they said they did.) The preparation is extremely easy. The only one thing you have to have – enough time for roasting. Thats all. You will need:
Large peace of pork – could be shoulder, could be leg, we tried both and both were DELICIOUS!
Sea salt
2-3 garlic cloves
Fresh rosemary
3 tablespoons of olive oil
1. Dry the skin with kitchen paper if you want to have nice and crispy crackling. 
2. Preheat the oven to 250 degrees
3. Score the skin. Even if it’s already scored, I like to make it deeper – we will need nice pockets to put garlic and rosemary. 🙂
4. Oil the skin with olive oil thoroughly. This will help salt to stick to the skin.
5. Sprinkle sea salt generously all over the skin.
6. Insert small slices of garlic and herbs in between the scores.
7. Place your pork in the oven and leave it for 30 minutes. Then lover the temperature to 190 degrees and  continue rosting.
8. After the meet is cooked leave it for 15-20 minutes to rest.
Tips: 
  • Before preparing your meet take it out of the fridge and leave it in a room temperature for at least one hour or more. Meat will be tender and juicy then.
  • To check if your meet is ready insert a knife in the thickest part of the meet and check a colour of the juice. If the colour is clear, your meet is ready. If not, continue cooking till the juice is clear.
  • Normally the cooking time will be written on the package when buying meet. I recommend to check if it is ready half an hour before recommended time to make sure you don’t overcook.
Serve it with potatoes, gravy and selection of vegetables. ENJOY!
